This strawberry panna cotta is a purr-fect twist on the classic dessert! Topped with roasted vanilla strawberries, it’s creamy, dreamy, and full of playful charm. Serve it to impress kids, family, or any cat lover. 🐱🍓


Ingredients

Panna Kitty-cotta:

  • 250g strawberries, chopped

  • 1/4 cup (55g) caster sugar

  • 6 gelatine leaves

  • 300ml pouring (pure) cream

  • 2 cups (560g) vanilla-flavoured yoghurt

Roasted Vanilla Strawberries:

  • 250g strawberries, halved

  • 2 tbs caster sugar

  • 1 tsp vanilla bean paste

  • 2 tbs water

Method

Step 1 – Make the strawberry puree
Combine chopped strawberries and sugar in a saucepan over low heat. Cook, stirring, for 5 mins or until sugar dissolves and mixture thickens. Cool slightly, then blend until smooth.

Step 2 – Prepare moulds and gelatine
Grease eight ⅔-cup (160 ml) dariole molds or ramekins. Place the gelatin in a medium bowl, cover with cold water, and set aside for 5 minutes to soak.

Step 3 – Combine cream and strawberry puree
In a clean saucepan over medium-low heat, combine the strawberry puree and cream. Heat gently for 3–4 mins. Remove from heat. Squeeze excess liquid from gelatine leaves and stir into the cream mixture until dissolved.

Step 4 – Add yoghurt and set
Place yoghurt in a large bowl. Gradually stir in the cream mixture until smooth. Pour the mixture into the prepared dariole molds or ramekins. Place on a baking tray. Place in the fridge for 4 hours or until set. 

Step 5 – Roast the strawberries
Preheat oven to 180°C and line a roasting pan with baking paper. In a large bowl, combine halved strawberries, sugar, vanilla, and water. Arrange mixture in a single layer and roast for 15 mins until softened. Cool completely.

Step 6 – Serve with a cat twist
Invert panna cottas onto serving plates. Top with roasted vanilla strawberries. Add optional cat-themed decorations—mini chocolate chip “eyes,” whipped cream “fur,” or paw-shaped biscuits—for a playful touch. 🐾
